Le Boulevardier plays the long game. Opened in 2019 inside Hôtel Le Germain, it channels the spirit of Parisian brasseries and café bistros without slipping into pastiche. The menu leans French but stays grounded in Quebec products, with seafood taking a central role—cleanly cooked, confidently sauced, and never overworked. Classics are nudged forward just enough to feel current, whether it’s a refined take on confit duck or a plate that veers briefly into raw fish and shellfish. Upstairs, the dining room carries a polished calm; downstairs, the Flâneur bar sets a looser tone with oysters, sharable plates, and cocktails that riff on retro formulas.
