
Le Virunga

Le Virunga is built on a deeply personal project. Since 2016, chef Maria-José de Frias and her daughter Zoya have been introducing Montrealers to a pan-African table shaped by Sub-Saharan traditions and Quebec terroir. The menu is compact and constantly evolving, pairing local meats and vegetables with ingredients like manioc, plantain, turmeric, and yam. Dishes are slow-cooked, layered, and gently spiced, favouring depth over spectacle—think cassava alongside Quebec lamb, or velvety soups that carry real heat. The dining room is intimate and softly lit, anchored by a mural tracing the African continent, setting the tone for long conversations and attentive meals. Drinks follow the same point of view, with an all–South African wine list and cocktails that lean aromatic.
