Projet Seoul occupies a large room on rue Bishop, downtown, planted heavily and fitted with a few actual trees to echo the café culture of the South Korean capital. Espresso is pulled with beans from De Mello, and the drinks lean Korean: an iced einspänner under whipped cream, a latte finished with condensed milk cream, matcha in pistachio and strawberry versions. Desserts are the main business. Croffles arrive hot, either dusted with injeolmi and topped with ice cream or turned savoury with brown cheese. Bingsu comes traditional, with finely shaved ice, sweet red beans and a scoop of ice cream, or in a matcha version served with mochi. The room was designed for sitting rather than takeout, an explicit response to how most downtown cafés operate. It opened in August 2026.
