Le Piment Rouge carries a specific kind of weight in Montreal: it’s one of the rare Chinese restaurants that crossed into fine dining territory early on, opening in 1980 and later anchoring itself inside the Windsor Hotel. For years, it catered to a downtown clientele that treated it as a destination, so when it closed in 2014, it left a noticeable gap.

Its return under founder Hazel Mah trades scale for proximity. Now based in Parc-Extension, the room is smaller, the tone more grounded, but the core of the menu remains intact. Signature dishes like Hunan dumplings, General Tao, and crispy spinach still define the offering, alongside a broader range of Sichuan-leaning plates. The approach hasn’t shifted so much as it’s been recalibrated into something just *a little* less formal, more neighbourhood-driven, but still rooted in the same kitchen standards that built its reputation.
