Zab Café is the natural extension of Zab Roasters’ deep-rooted commitment to quality coffee and community. What started as one man’s vision—Edwin Chareton’s determination to bring more specialty roasting to Quebec—has grown into a local institution, fuelled by a blend of passion, experimentation, and meaningful partnerships.

Zab made its mark in Montreal’s café culture through an early alliance with Paquebot, one of the city’s most forward-thinking coffee spots. That collaboration led to a full-fledged merger, expanding their footprint across multiple locations, from their roasting workshop in Parc-Ex to a café-laboratory on Saint-Denis. Each space carries a distinct character, but the throughline remains: a focus on high-quality beans, innovative brewing techniques, and an unpretentious approach to specialty coffee.
