
Pâtisserie Chouquette

Rachel Parenteau and Olivier Verdot met in 2018 at Patisserie Rhubarbe in Montreal, where Olivier had recently arrived from France after training at Debrie in Montbéliard. They sharpened their skills separately before joining forces: Olivier at Arhoma in Hochelaga, Rachel at Lecavalier Petrone and Patrice Pâtissier. The pair decamped to Quebec City for a quieter pace and opened Chouquette on rue Saint-Jean in the Saint-Jean-Baptiste neighbourhood. The name comes from Olivier's childhood, where his grandmother would arrive with a bag of the classic sugar-pearl puffs. The house specialty remains the chouquette, sold plain at $0.50 each or filled with rotating seasonal flavors, with salted caramel a near-permanent fixture. The rest of the display case runs to éclairs, mille-feuille with Madagascar vanilla cream and Tonka bean caramel, tarts, chocolate biscuits, and viennoiseries. Coffee is from Fantôme Café.
