Hotel Bonanza leans into a very specific fantasy as it lands somewhere between a suburban dive and a low-stakes version of old Las Vegas. The room is built on details that feel deliberately worn-in rather than polished (the owners did some heavy vintage shopping to dress the place). There’s a pool table anchoring the space, and karaoke’s in heavy rotation.

The project comes from a team already familiar with nightlife, having previously launched the Sainte-Thérèse wine bar DEUX, and it shows in how the place is programmed: simple drinks, late hours, and a layout that encourages people to stay put.
