Sample occupies a basement beneath a 19th-century greystone in Old Montreal, built around a serious analog sound system, a McIntosh MC275 amplifier, and a vinyl collection of 150-plus records curated toward soul, jazz, funk, and disco. The room earns its concept: acoustic panels, warm orange walls that pulse with backlit glow, and seating arranged so everyone faces each other. From the team behind The Coldroom, El Pequeño, Bisou Bisou, and Bar Bello, it's a cocktail bar first, but one where what's playing shapes the entire experience. Guest curators spin on weekends, and there's a polite ask at the door to keep your phone away. The 11-drink menu, bottled and batched for fast service, spans spirit-forward to crushable, with zero-proof options alongside. Simple food (smørrebrød, beetroot hummus, muhammara) rounds things out without distracting from the main event.
