Structure Torréfactures is a coffee roaster first, an Old Montreal café second. Opening in 2017, the roaster’s aim is twofold—to source the perfect bean and forge relationships while doing so. They meet and work with producers directly, while connecting with customers through their storefront. Behind a pair of glass doors in a classic Old Montreal greystone, the space is industrial, with a mid-century modern flair. Coffee is, naturally, their focal point, as baristas expertly pull espresso and complete their lattes with artistic finishes.
