It’s balanced, deliberate, and unmistakably Vietnamese, right down to the use of fresh chili instead of shortcut sauces.

Elsewhere, the menu loosens up. A char siu bao burger pulls East and West into the same bite without collapsing into novelty, and the patê sô keeps things grounded with proper flake and peppery depth. Finish with a cà phê trứng made the right way—robusta coffee, rich condensed milk, custard-like foam—and the point becomes clear.
