Capitol Butchers has been serving Quebec since 1957, but its roots stretch further—back to an Italy where quality wasn’t a luxury, just the standard. Founded by Antonio Le Donne, a butcher with strong opinions and sharper knives, the shop built its reputation on two pillars: top-tier local meats and carefully sourced Italian imports you couldn’t find anywhere else. His son Tony took over in 1995 and widened the scope without watering down the soul.
