
Feuilleté Café operates at a very specific scale on purpose. Opened in July 2023 on Bellechasse, the café is small, production-driven, and built around what can realistically be baked, brewed, and sold well in a single day. Joshua De Gagné, trained at the ITHQ, runs the operation with a pastry-first mindset: tight menus, repeatable techniques, and an emphasis on consistency over novelty.
Viennoiseries and baked goods are made on site, with classics taking priority—croissants, scones, cakes—supported by a short list of savoury items like focaccia-based sandwiches that evolved in response to customer demand. The coffee, roasted by 94 Celsius, is deliberately calibrated to be familiar. Family involvement is infrastructure here, from sourcing ingredients to shaping the business itself.
