Canons! (Quartier Dix30)

Canons! set up shop in DIX30 with the same guiding instinct that shaped the original Belœil bar: pour good wines in good company. At the centre of it all is sommelier Pascal Paradis, whose approach hasn’t changed since his early days: bottles picked for feeling, not flash. The outpost keeps that tone alive in a polished, modern room lined with photography and a playlist of producers you don’t see everywhere.

The list leans biodynamic and low-intervention, with a strong showing from Quebec vineyards, and the staff talks about the bottles the way cooks talk about ingredients. The kitchen follows the same logic: seasonal plates, local sourcing, and dishes built for sharing.
