About

A small family cidery on Chemin Royal in Saint-Laurent-de-l’Île-d’Orléans making natural cider, which here means spontaneous fermentation, nothing added and no filtration. Daniel Blais is behind it, production is limited, and the bottles move mostly through private order and the better bottle shops in the province. The house style is a dry pet-nat around seven percent, heavily carbonated, bright apple with a bit of peel and tannin and enough acidity to carry the finish, built on varieties like Golden Russet and Empire.
