Le Presbytère

Founded by chef Isabelle Dupuis and brewer Francis Boisvert, both graduates of UQTR's fine arts program, Microbrasserie Le Presbytère occupies a converted 1800s presbytery in Saint-Stanislas-de-Champlain, in the Mauricie region. The two opened their first restaurant in the village in 2003, bought the presbytery in 2015, and converted it into a brewpub. The kitchen has built its identity around forest gastronomy: wild mushrooms, alder pepper, comptonie, bayberry, and invasive Japanese knotweed all appear in dishes and beers alike. Around 80 percent of the grain used in brewing comes from the Mauricie. The signature "Acte de foi" tasting menu is built on rare-volume ingredients from small local producers, served blind. The operation has grown to include an inn in a Victorian house across the street, a boutique selling terroir products and Zachary's puddings (with a $2-per-unit donation to a disability support organization), and an artist exhibition program. Dupuis won a mushroom gastronomy competition in 2018 that led to stages in two Michelin-starred restaurants in Spain. Named Restaurant of the Year at the 2026 Gala des Lauriers de la gastronomie québécoise.
