Juan Lopez Luna’s culinary journey began at the age of 16 when he left his hometown in Tlaxcala, Mexico, and ventured into the kitchens of Jackson Hole, Wyoming. There, he met Lindsay Brennan, his future business partner and wife, marking the start of a dynamic partnership in life and business. With a shared passion for food and wine, the couple explored culinary traditions in Mexico, Italy, and Catalonia before making their home in Montréal in 2010.
Alma, the restaurant they co-founded in Outremont, originally embraced fine Catalan dining. However, during the pandemic, Juan pivoted to more casual fare, serving dishes like rotisserie chicken and octopus from a back alley. This evolution led to the opening of Tinc Set next door, a tapas-forward restaurant offering an excellent focus on wine, where they combine Juan’s expertise with Lindsay’s knowledge.
Rooted in Mexican traditions, Juan’s cuisine at Alma is inspired by his childhood memories and the vibrant food culture of his native Tlaxcala.
