Le Taj was among the first restaurants in Montreal to give Indian food a white-tablecloth setting, thanks to founder Vinod Kapoor. The dining room mixes 18th-century wooden carvings with a striking piece of local history—a 12-foot mud wall salvaged from the Indian Pavilion at Expo ‘67—while a glass-walled tandoor lets diners watch naan and chicken cook. Rich, cream-based sauces tuned to local tastes are the main draw, rather than strict regional authenticity.
