Min.T takes its name from its owners: Minh Vo runs the room and mixes the cocktails and mocktails while her husband, chef Tung Vo, works the kitchen of this 22-seat LaSalle restaurant, opened in 2025 in the quiet corner of Montreal the couple calls home. The menu starts from the Vietnamese dishes they grew up with, then reaches outward, blending Quebec ingredients with Vietnamese herbs and fish sauce, Korean jangs and gochugaru, Thai tamarind and lemongrass, Japanese miso and sake. Pho ga and pho bo, banh mi and com tam hold down the comfort end, while plates like the red wine-glazed pork belly with sansho pepper, gochujang walnuts and prune purée show the kitchen's range. A short, mostly French wine list and beers from Quebec microbrewery Maltstrom keep the drinks in step.
