At Légende, chef Frédéric Laplante explores the flavours, symbols, and ingredients that shaped Quebec’s culinary lineage, from Indigenous foodways to colonial traditions and onward, through six meticulously composed courses. The result is less a history lesson and more a sensory mythology: one that draws on boreal spices, wild herbs, and forest-foraged elements to tell stories rooted in this land. Set in a space designed for communal discovery, the restaurant treats dining as a form of storytelling, balancing rigour with imagination. Every dish is a meditation on place, from river to forest to field. The tasting menu changes with the seasons and is optionally paired with either prestige wines or thoughtful non-alcoholic options.
