Founded in 2003, Les Chocolats de Chloé operates out of a compact workshop on Avenue Duluth Est, where everything is made on site, in full view. Owner and chocolatier Chloé Gervais-Fredette trained at the ITHQ before honing her craft in restaurants, catering, and pastry kitchens, eventually opening her own shop after an early stint selling chocolates from a borrowed counter at Olive et Gourmando. The focus here is small-batch production using Valrhona chocolate, with a lineup that ranges from classic ganache truffles to more exploratory flavours like Earl Grey, Espelette pepper, basil, or passion fruit. Tablets, brownies, sponge toffee, and house twists on nostalgic sweets round out the offering. It’s a working chocolaterie first, designed around process, freshness, and repetition rather than scale.
