Taking over the former Pontiac space on Mont-Royal Est, Bincho shifts the mood without overhauling the block. The room, designed by Bianca Jodoin, trades pizza place residue for low light and saturated reds, with a long counter that quietly suggests you might be here awhile. The kitchen moves between Japan and France: Hot oysters or karaage might start the night, cucumber salad bright with sesame and spice, all leading up to a hanger steak cooked over binchotan charcoal. Drinks lean into the same cross-cultural dialogue.
