
Ramen Youki

A Hiroshima institution with roots going back to 1958, Ramen Youki makes its first foray outside Japan on the Plateau, where Shinichi-san, a direct descendant of the founding family, is bringing their signature style to Montreal. The focus is Hiroshima-style shoyu tonkotsu: a broth built from pork bones and chicken carcasses, deliberately light on the palate but deeply layered in flavour, served with classic toppings in a spare, warm room that reads less like a restaurant than a neighbourhood fixture somewhere in Japan. The menu is compact and focused, with karaage, onigiri, and a spicy mabo ramen rounding out the bowl selection.
