The owners here come from Mediterranean families of shopkeepers, and the premise they brought to Saint-Denis is that fresh fruit and indulgence are not opposing forces. The kitchen runs on waffles, split roughly evenly between sweet and savoury. The savoury side treats the waffle the way a pizza treats dough: cheese sauce with spinach, mushrooms and a poached egg; marinated salmon with capers and red onion; smoked meat under caramelized onions with goat, brie or provolone melted over top. Sweet versions start from a vanilla batter made without added sugar, then get cheerfully undone with Nutella, pistachio cream or torched marshmallows. Juices and smoothies are pressed to order with no water and nothing added, and the menu extends to sandwiches, salads, sundaes and boards meant for sharing. Wifi is free, dogs are welcome, and a private room can be booked for meetings or baby showers.
