Didar sits on the Victoria Avenue strip in Côte-des-Neiges, named for the late father of Paramjit Singh, who runs it. Singh grew up cooking in Bhadas, his village in Punjab, worked kitchens in Germany and Greece before landing in Montreal, took over as head chef here in 2005 and bought the place in 2015. His wife, Kamaljit Kaur, joined him in 2007, and the two have run it together since. The menu is long and Punjabi at its core, with the clay oven doing much of the work: tandoori chicken and shrimp, seekh kababs, paneer tikka, a naan list that runs to keema, spinach and paneer. Pakora comes by the plate or the pound. Thalis cover both directions, including an Amritsari version built on onion kulcha. There is an Indo-Chinese corner too, and imported Limca and Thums Up.
