On Duluth Est, Bāgā keeps things tight on the plate and in the room. The P’tit Dep alum behind it put together a menu of three options (beef, chicken, vegetarian) all priced the same, with fries on the side and bacon as the lone add-on. An egg bun stands in for brioche, chosen for structure over sweetness. The sourcing is strictly local, from the beef to the cheddar to the ketchup— soft drinks, too. The space leans minimalist, with low seating and custom fixtures.
