Moleskine began life on Parc Avenue in 2016, a project shaped by Pullman’s Catherine Bélanger and designer Bruno Braën. What started as a split-level restaurant—part pizzeria, part upstairs dining room—has since refocused into a single, streamlined counter at Time Out Market Montréal. The move clarified its identity: Chef Frédéric St-Aubin’s approach to dough and toppings still anchors the operation, drawing on the same mix of precision and play he developed in the original wood-oven kitchen. The menu leans on well-defined favourites from a sharp Salsiccia and a clean Marguerite to a pesto-driven Genovese. It’s a compact setup now, but the craft behind the pies hasn’t gone anywhere, it just found a busier crossroads.
