Catherine’s approach rejects trends of shareable plates in favour of individual portions, and her philosophy extends to sustainability, with creative waste management repurposing almost every scrap. Panacée’s lush green and gold decor reflects its ethos: thoughtful, refined, and rooted in the joy of good food and company.
