Helmed by Foxy and Bouillon Bilk alum Catherine Couvet Desrosiers, Panacée in Montreal’s Village is an intimate 30-seat space that revolves around an 18-seat counter serving up a personal menu with two prix-fixe options that showcase seasonal, local ingredients.

Catherine’s approach rejects trends of shareable plates in favour of individual portions, and her philosophy extends to sustainability, with creative waste management repurposing almost every scrap. Panacée’s lush green and gold decor reflects its ethos: thoughtful, refined, and rooted in the joy of good food and company.
