Notte opened at 9 Church Street in January 2026, folding Amano Trattoria and its cocktail bar, Bar Notte, into a single room in St. Lawrence. Co-owners Adam Teolis, Yannick Bigourdan and chef Michael Angeloni rebuilt it around the argument that Toronto diners had started talking about the bill instead of the meal, so the night is bookended by aperitivo at the open and a second round of discounted drinks and plates late, with no seating limits in between. A salumi bar sits at the front of the room, pasta is rolled daily, and the Roman pizza runs on a 72-hour dough. Past that come antipasti, secondi, a porterhouse for two and a Sunday gravy served family style. The drinks list leans on amaro and Italian bottles priced with modest markups. Pasta Privato, the group's tasting-menu room, sits behind a red curtain inside.
