Pasta Privato opened in 2026 behind a red curtain inside Notte Ristorante, in the heavy-timber heritage building at the foot of Church Street in St. Lawrence. Michael Angeloni, who cooked at Splendido, the Black Hoof and Oro before leading the kitchen at Amano Trattoria, since rebranded as Notte, runs it as a dedicated pasta room: no more than 30 seats, four nights a week, every shape formed by hand. The menu is a tasting sequence rebuilt every six to eight weeks around what Ontario growers send, and it reaches past Italy when it wants to, with pumpkin dashi and Hokkaido scallops turning up alongside tajarin, agnolotti and Sardinian lorighittas. Angeloni's Polish and Italian upbringing runs through it. The restaurant is a partnership with Adam Teolis and Yannick Bigourdan, also behind Berczy Tavern, Restaurant Lucie and the Carbon Bar.
