Laurie Raphaël is the long-running, intergenerational project of a family that helped define Quebec City’s culinary identity. Opened in 1991 by chef Daniel Vézina and Suzanne Gagnon, the restaurant is now helmed by their son Raphaël in the kitchen, with daughter Laurie managing operations. Their tasting menu format is organized around five evolving themes, each rooted in local ingredients and seasonal stories—from regional traditions to international influences. The current space on Dalhousie is intimate by design, with metalwork by artist REBELLION and a layout that keeps the spotlight on the food. With a biodynamic-leaning wine list curated by sommelier Samuel Blanchard and a menu that changes with the harvest, each meal here plays out like a carefully composed narrative. It’s less a restaurant than a living reflection of Quebec’s terroir—and one that continues to evolve under the same family name.
