Matthew Shefler never met his grandfather, but he grew up surrounded by his stories. An Italian army pilot from Bari in Puglia who ended up in the Congo, he opened a shop importing European charcuterie, cheese, and wine. Then built his own dough machine in the back and started slinging pies under the name Pizza Pronto. He was also a painter, meticulous enough to hand-paint his shop logo on boxes.
This story was in the back of Shefler’s mind, especially six years ago when he opened Knuckles in Villeray with chef Vincent Lévesque-Lepage. Knuckles carries traces of Shefler's grandmother, with the panzerotti at the heart of the menu being her recipe. But now their new pizzeria, Nonno's, in Park Extension is rooted in Shefler's Italian grandfather's side of the family.
