The Michelin Guide released its second annual Quebec selection this morning, and the province's restaurant community has plenty to discuss.
Four restaurants earned their first One Star, three more were recognized with Green Stars for their commitment to sustainable gastronomy, and the full selection grew to 121 restaurants spanning the province, from Montreal's Mile End and the Eastern Townships to the Gaspésie.

The New Stars
The biggest news for Montreal: two of the four new One Stars landed in the city, with Hoogan et Beaufort and Sushi Nishinokaze joining the guide's starred ranks.
Hoogan et Beaufort, Marc-André Jetté's wood-fired room on a repurposed brownfield in Rosemont-La-Petite-Patrie, has long been one of the city's most compelling dining destinations. The inspectors singled out the kitchen's commitment to live-fire cooking (yes, even desserts) alongside a wine list curated by sommelier Hugo Duchesne, who separately picked up the Michelin Sommelier Award. The restaurant's bones are part of the story too: red-brick walls from 1904, exposed metal framework, and a space that has endured since it first opened over a decade ago in 2015.
